What This Is All About

Greetings!

My name is Monica, and I am a college student in the last year of my undergraduate degree. Between my classes, work, and student groups, I am a busy gal. 

​

I have had sensitivities to gluten and dairy for most of my life. Recently, my doctor told me that I need to eat a healthier diet, focusing on anti-inflammatory foods to nourish my body while I figure out some health issues. 

​

My honest reaction? I don’t have time for that! 

​

Like many other students, I relied heavily on processed foods that are cheap and very low-effort. Thankfully, I was already used to avoiding gluten and dairy, but the thought of cooking all my meals from scratch seemed so daunting. 

 

Let’s face it, cooking can take a lot of time and effort, things that students usually have in short supply. However, we each only have one body for the rest of our lives, so we have to prioritize taking care of it. 

 

My doctor emphasized making small changes where I am able. So many food blogs out there are aspirational and make cooking healthier feel out of reach. But making any effort is a start, and pursuing wellness is all about starting little habits that build up to a healthier whole. 

 

I know that there are many other people out there who are in similar positions, wanting to eat more healthily but unsure of how to start. I hope that sharing my own journey, and the tips and tricks I learn along the way, can be a helpful and realistic resource to others who need a little support and encouragement in this process.
